The Best Loaded Breakfast Burrito

I often eat this closer to lunch than breakfast, because I don't usually want this much food early in the morning, I prefer fruit, smoothie, tea or coffee first. Regardless when you eat it this recipe is delicious and filling.

Tortillas / Food for Life tortillas are my go to

1 Block tofu / Firm or extra firm, Crumbled

1 cup mushrooms / Cremini (baby bella), shiitake, oyster

1/2 red bell pepper

1/2 onion

8-10 Cherry tomatoes

2-3 cloves garlic

2 Tsp Smoked paprika

3 Tbsp Nutritional yeast

1 Tsp Turmeric

1-2 Tbsp Liquid aminos to taste

Optional:

Kale, spinach, corn, beans or lentils, breakfast potatoes, avocado toast in place of tortilla.


Directions: Cook onions for 5 minutes, add peppers, mushrooms and cook for 1-2 minutes.

Then add crumbled tofu, tomatoes, and other seasonings and cook for 5-10 minutes to cook off the water.


To make it faster...

You can replace the peppers, onions, tomato, and garlic with sofrito. If using fresh or frozen sofrito add the tofu and mushrooms to the skillet first and cook for 5 minutes, add sofrito and other seasoning and cook for 5 more minutes.


If using optional ingredients like kale, spinach, cooked lentils, add them at the end and cook for 1 minute.

Top with:

Salsa

Sprouts

Nutritional yeast

Hot sauce

Avocado


This recipe is super versatile and pretty forgiving, you can add many more seasonings, for a sausage flavor — rosemary + sage + fennel seed + mushrooms — Or, chili powder + cumin + garlic & onion powder + black pepper + red pepper flakes for a more Mexican flavor.
